Apple Sauce Holiday Spice Cake

The fragrance when combining cinnamon, ginger, nutmeg and all spice, coupled with applesauce, satiates the home with a wonderful holiday aroma.The brown sugar is a definite plus, and although I sometimes use organic brown sugar, this recipe tastes delicious with regular light brown sugar.I make my own apple sauce,as I like the semi-chunky texture, however any applesauce will do. I have the instructions below this text if you want to make your own. The bake time on this is another plus because it only takes about thirty five minutes. After the cake has baked you can simply sprinkle some powdered sugar on top, or leave it plain and savor the flavors already mentioned. Sometimes for a really special treat, I like to frost the cake with a buttercream icing. Your guests and or family will rave for this autumn exquisite.

Cake Ingrediants:
2 cups of all-purpose flour or cake flour
1 tsp of baking soda
1 stick of butter
1 cup of brown sugar
1 cup of apple sauce
1 tsp ground cinnamon
1 tsp of ground ginger
1/4 tsp of nutmeg
1/2 tsp of all spice
1 tsp pure vanilla
2 large eggs
confectioners sugar for sprinkling

Instructions:
Preheat oven to 350 degrees and grease a 9-inch cake pan
In a bowl combine flour, baking soda, and the spices
In a saucepan melt the butter
Once heated, remove the pan of butter and whisk in the sugar and one egg at a time.
Add the vanilla
Combine the flour mixture with the egg mixture
Bake until there is a clean center, about 35 minutes
Cool on a wire rack

Homemade Apple Sauce:
Instructions:
Peel, core, and cube 5 apples (almost any will do)
Place apples in sauce pan and add 1/3 cup of brown sugar and 2 tsps cinnamon
Cover with tap water
Bring to a boil, then lower heat and simmer for 20 minutes
Drain the apples in a colander and return them to pan and mash them with a potato masher
