(1.) Basting is the secret to a moist bird. Baste every 15 minutes or so with the pan juices. I also always keep some melted butter on the stove and baste with that too.
(2.) There's no need to fear carving. It's easy if you first remove the legs, and then remove each half of the breast off the turkey. Set the breast half on the cutting board and slice diagonally.
