    Bobby Flay's Recipe for Brussel Sprouts With Pomegranate and Walnuts

    1 lb Brussels sprouts, trimmed
    2 tablespoons canola oil
    Salt and freshly ground black pepper
    4 tablespoons cold unsalted butter
    Seeds from 2 pomegranates
    ¼ cup coarsely chopped toasted walnuts

    1. Preheat oven to 375 degrees F. Place Brussels sprouts on a large baking sheet, toss with oil and season with salt and pepper. Roast in the oven until just cooked through, about 25-30 minutes.
    2. Transfer sprouts to a large bowl, add the butter and stir until melted. Stir in the pomegranates seeds and walnuts.

      This recipe omits that on TV, Bobby quartered the sprouts prior to baking, which adds much more carmelization to the dish. I will quarter them.

      brussels sprouts are delicious when properly cooked as Bobby has shown. i started serving them to some new friends a few years ago and now they want them all the time...roasting gives them carmelization and flavor...don't forget the salt and some garam masala...these are not those soggy little balls we were forced to eat as kids.

      I agree Pepper - they are delicious! If you've hated brussel sprouts before, you should try them roasted. You may be pleasantly surprised. The carmelizing makes them sweeter (none of that bland boiled aftertaste) and the outside petals develop a nice crisp texture. Plus, you can't go wrong with a Bobby Flay recipe. He rocks!
