Cherry Delicious! Cool Off with a Homemade Popsicle

Pitting cherries isn't my idea of a good time, but my toddler LOVES to do it. When we made these popsicles, I spent half an hour working on other house projects while she happily pitted a whole bowl of cherries. Perfect!

Ingredients:
1/2 cup lime juice
1/2 cup sugar
2 cups water (or more if it is too sweet for your taste)
3/4 cup of pitted cherries

Directions:

1. In a blender, blend the cherries and sugar/lime/water mixture until mostly smooth (if you have a really nice bender you can probably get it completely smooth - mine left the cherries in little chunks which was fine with me).

2. Pour into popsicle molds and freeze until solid. Run warm water over the outside of the molds until you can release them easily. Eat immediately.
