    Just because it's winter doesn't mean we can't enjoy a beautiful winter salad! I received some gorgeous fresh endive over the weekend and paired it with a few yummy ingredients, including apples! Here's the refreshing recipe:
    Apple Endive Salad with Poppy Seed Dressing
    Salad: 6 small heads of endive, chopped (I used green and red) 1 sweet apple, chopped 1 medium cucumber, chopped 6 radishes, sliced thin 1/2 red onion, chopped
    For the Dressing: 2 tablespoons honey 2 tablespoons apple cider vinegar 41/4 cup olive oil 1/2 teaspoon dry mustard powder 1 teaspoon poppy seeds 1 clove garlic, grated
