    Drunken Spaghetti

    Fabio's mother helps him set the mood and the menu for a romantic dinner starring her stunning drunken red spaghetti.

    Tips:

    • To make a special meal, a bottle of opened red wine is worth splurging on to use as the liquid to boil pasta. Reserve some of the starchy liquid from the boiling process to use in your final sauce.
    • To measure portions for pasta, you can use coins (clean them first!) A child's serving is roughly the size of a dime. A hungry adult is usually about two nickels or a quarter's worth.
    • Ricotta, pancetta and fresh walnuts make this an Italian masterpiece dish, that's super easy to make!

    Drunken spaghetti

    DRUNKEN RED SPAGHETTI

    Recipe by Fabio Viviani

    Yields: 2 large servings

    Ingredients:

    1 box dry spaghetti pasta

    1 gallon 50% water 50% red wine

    8 oz. diced pancetta

    2 Tbsp. butter

    4 oz. ricotta cheese

    ½ cup walnuts, chopped

    shaved pecorino cheese to top


    Method:

    Cook pasta until al dente in mixture of boiling water and wine.

    In a separate sauté pan, sauté pancetta in butter to render.

    Add al dente spaghetti with some of the reserved cooking liquid (about a tablespoon) to the sauté pan with the Pancetta.

    Once the liquid has reduced, remove pasta from the heat.

    Add ricotta and walnuts and mix with tongs.

    Top with pecorino and serve.

      I made this on Sunday along with some meatballs and it was delicious. The wine adds a subtle flavor to the dish. Will definitely make it again sometime. Mangia!!!

      Wow!! Nobody here has a sense of humor or adventure. Perhaps you all need to travel to Italy and experience the many amazing things that can be done with pasta....Plus maybe listen to what the man is telling you. I don't think Fabio is suggesting you dump an expensive bottle of wine in your pot....use some barely drinkable red you have left over from some previous debauchery, or some cheap table wine you buy at Trader Joe's . The only thing I might suggest here is toast the walnuts for some additional flavor. It also might help to try out the recipe before condemning it, you might just be surprised....This guy has so much love of life and spirit in him it puts most of us to shame. Go Fabio!

      It's crazy to use an expensive wine. Use 2 buck Chuck from Trader Joe's it will be great. Instead of walnuts I would use pistachios which are more Italian.

        I am not intrigued with 2 buck Chuck. I have used it in cooking and it is much harsher than any red wine I can usually find for 6 or 7 dollars.

        I was going to make (read:assemble) a Jumbaco for my wife served with a vintage 2011 Steel Reserve, however your noodles, sir, are a winning recipe. Then after dinner with my wife, I shall make Fabio's spaghetti for my girlfriend.

      Love Fabios recipes...and he makes the segments fun and enjoyable to watch. Really a fan. This one *sounds* yummy but it looks....yuck. The appearance is really unappetiizing and I have to assume that if that is the best a pro food stylist can do wit this dish, then I have no chance of making it look appealing on the plate. I dont want to put something down in front of my family that they are scared to try because it looks so icky. Food should make you want to try it...sorry to say this really does not.
