    I'll admit to struggling on occasion to get my weekly intake of vegetables. The truth is when you lead a busy life, sometimes you just eat what you can, when you can. To make things a bit easier, we've rounded up five of our favorite fast and easy meals that also happen to be loaded with all kinds of vegetables. Click through to plan your meals for this week.

    • Fried Zucchini Spaghetti: Fried zucchini spaghetti puts the squash to good use. Add a protein like sautéed or grilled shrimp to make this a more substantial dish.
