pastryIf you are looking to make mom something extra special for Mother's Day breakfast in bed, but your culinary skills are not exactly up to her standards, just get yourself some puff pastry. You can find it in the freezer section of the grocery store. It kind of looks like pie crust only when you bake it, it transforms into magical puff pastry, like a croissant. The possibilities of fillings are endless as well as the shape or form you wish to create. Would you like to make a mom a danish, a turnover, a filled croissant? Whatever you want to serve the mom of the house for this Mother's Day it will be easy and delicious with puff pastry. I've put together a simple guide to making three types of breakfasts she is sure to love.
Ham and Cheese Filled Croissant, Apple Turnover, Apple Danish

Defrost puff pastry according to package. Preheat oven to 400 degrees. Lightly flour your work surface, unfold the puff pastry dough (it comes folded into thirds) and place onto floured surface. Sprinkle with flour and roll out your dough. Using a pizza cutter slice dough in half from top to bottom. If you want to make danishes, cut each half into thirds. If you want to make turnovers cut in half again from side to side leaving 4 squares. For croissants, cut the four squares in half on the diagonal. Make the egg wash by beating one egg with 1 tablespoon cold water.
For Danishes: brush the edges with the egg wash and fold over about 1/2 inch and press with a fork. Place apple pie filling or any other fruit pie filling into the center. Brush the edges with the egg wash and bake on a parchment lined baking sheet or directly on a pizza stone. Bake for 10 to 15 minutes. Remove and sprinkle with powdered sugar (I used a sifter).
For Turnovers: Place apple pie or any other fruit filling onto one half of the square (on the diagonal). Brush edge with egg wash and fold over the top. Press edge with fork and brush top with egg wash. Bake on a parchment lined baking sheet or pizza stone for 15 to 20 minutes. Remove and sprinkle with powdered sugar.
For Croissants: Sprinkle a pinch of thyme over the center of the triangle. On one edge of the triangle place a piece of ham, then a slice of cheese. Brush all three edges with the egg wash and rol up from the bottom. Fold the ends into the center and brush with egg wash and sprinkle with thyme. Bake on Parchment lined baking sheet or pizza stone for 15 to 18 minutes.
