    5 simple, yummy dinners with rotisserie chicken

    Combine a store-bought rotisserie chicken with a few ingredients and you’ll have a healthy meal in minutes for your family. Rotisserie chickens can be found at your local supermarket and are a great shortcut for quick and easy recipes that call for cooked chicken. From soups to casseroles, Shine Food Editor Sarah McColl found a variety of yummy dishes you can put together in no time for easy, weeknight (or weekend) dinners.

    BBQ Chicken Sandwiches

    Chicken with Pasta

    Chicken Enchiladas

    Chicken, Spinach, & Bean Soup

      2 teaspoons extra-virgin olive oil
      2 leeks , white and light green parts only, cut into 1/4-inch rounds
      1 pkg fresh spinach
      1 tablespoon chopped fresh sage or 1/4 teaspoon dried
      2 14-ounce cans reduced-sodium chicken broth
      2 cups water
      1 15-ounce can cannellini beans , rinsed
      1 2-pound roasted chicken , skin discarded, meat removed from bones and  shredded (4 cups)
      2 bags prewashed baby spinach
                                                                                                                                                                                Directions: Heat oil over medium heat. Add leeks and cook. Drop in sage. Stir in broth and water, cover and bring to a boil. Add beans and chicken. Cook uncovered, about 3-5 minutes. Add fresh spinach. Serve

     

    Chicken  Teriyaki Wraps

    3 T. Teriyaki Sauce
    1 1/2 cups of chicken, chopped
    1 t. sesame oil
    1 Tb. vegetable oil
    1 Tb. grated ginger
    1 Tb. grated garlic (about 2 cloves)
    splash of white wine (optional)
    3/4 cup red pepper, finely chopped
    2 Tb. soy sauce
    2 Tb. Asian fish sauce
    2 Tb. Chile garlic sauce
     1/2 cup fresh mint leaves, chopped
     Lettuce
     
    Garnish: Cucumber & scallion matchsticks, chopped salted peanuts, mint leaves 

    Directions:
    Add Teriyaki sauce to chicken and put aside.
    Heat oils in pan and add garlic and ginger. Saute until golden and deglaze pan with wine if using.
    Add the redpepper and continue cooking. Add chicken and stir. Add the soy, fish and chili sauces and continue to stir fry.
    Add mint when you are almost done and sauces have absorbed.
    Serve chicken in small spoonfuls atop lettuce leaves. Top with garnishes, roll up and enjoy!
    You can also add an Asian dipping Sauce - any preferred brand.
