1 cup sugar
3 cup shredded unsweetened coconut
1 teaspoon vanilla extract
Pinch of salt
Nutella for the sandwiches
Preheat oven to 275 degrees. Combine all ingredients in a large bowl and mix well.
Use a non-stick baking sheet or line with parchment paper.
Scoop a rounded tablespoon of dough and flatten like a cookie. Place each "cookie" about 1" apart on the baking sheet.
Bake 25-30 minutes or until light brown.
Wait until the cookies cool and spread a thin layer of Nutella on each cookie and press together.
