And, it's named after one of our very favorite Downton Abbey characters. Here's to you, Edith!
Lady Edith High Tea Cocktail
6 oz fresh lemon juice
3 oz simple syrup
6 oz Beefeater Gin
3 oz Lillet Aperitif Wine
2 tablespoons Afternoon Darjeeling Tea
In a cup, combine the loose leaf tea and the gin. Allow the mixture to steep for 30 minutes. Strain the gin and place in a shaker with the lemon, simple syrup (1 part water to 1 part sugar), Lillet and ice. Shake well and pour into your glasses. If you are feeling fancy, feel free to give the glass a sugar rim. Top off with a bit of club soda, and serve.
