    Spicy Corn on the Cob with Lime Butter

    This is a zesty take on ordinary corn on the cob, with bright and tangy lime butter and a hint of spice.
    Spicy Corn on the Cob with Lime Butter
    serves 4
    Ingredients:
    4 ears sweet corn, shucked
    3 tablespoons butter
    zest of 1 lime
    1/2 teaspoon red pepper flakes
    1 lime, quartered
    1/2 teaspoon salt, plus more for finishing
    ground cayenne and pepper to taste
    minced parsley, optional

    Directions:
    Boil corn in well-salted water for 6 - 7 minutes. Remove from the water and set aside.
    Meanwhile, in a small saucepan over low heat, combine the butter, lime zest, salt, and red pepper flakes. If using pepper or cayenne, add that too. Once butter has melted, stir, turn off the heat, and let the ingredients steep.

    Drizzle the butter mixture over the corn, and finish with a squeeze of lime, a pinch of salt, and a sprinkle of parsley. less

      My after-school snack was a sacred ritual. I sat on the carpet in my parents' bedroom at a low table, the television turned to "I Dream of Jeannie," and ate a peanut butter and honey sandwich cut into neat squares. I wasn't fussy about crusts. I just loved the sticky pairing of creamy peanut butter with syrupy golden sweetness drizzled from a honey bear in diagonals across the soft white bread.
