    Nacho Roulette

    What kind of excitement you can bring to your Memorial Day BBQ this weekend? Think food and games. What kind of game you may ask? How about a round of Nacho Roulette. I know you may be thinking what in the world is that. Well, it is a way to add a little spice to your life. The object of the game is to see who can tolerate the most heat from a hot pepper. Since Nachos usually use Jalapeno peppers as the heat ingredient we have decided to spice it up a bit by choosing different hot peppers from around the world.

    The Serrano pepper would be great for the first round of Nacho Roulette. They are about 5 times hotter than the Jalapeno pepper, but are very popular. Next you can try the Thai pepper. These peppers are popular in Asian cuisine and sauces. Then you may add on the Scotch Bonnet pepper. This pepper is commonly used in spicing up Caribbean dishes. And the hottest spice to add to your Nachos is the Habanero pepper. This pepper is well known throughout the world as being spicy hot! But don't let that stop you from taking a bite.

    Recipe:

    1 pound cooked ground beef crumbled or cooked chicken shredded

    1 (18 ounce) package restaurant-style tortilla chips

    1 cup shredded sharp Cheddar cheese

    1 cup Queso Blanco, Mexican cheese

    1 (15.5 ounce) can refried beans

    1 cup salsa

    1 cup sour cream, or more to taste

    1 (10 ounce) can pitted black olives, drained and chopped

    4 green onions, diced

    1 (4 ounce) can sliced Jalapeno peppers, drained

    2 Serrano Peppers

    2 Thai Peppers

    2 Scotch Bonnet Peppers

    1 Habanero Pepper

    Directions

    1. Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil.
    2. Spread tortilla chips on the prepared baking sheet; top with cheeses and dot with refried beans and meat.
    3. Broil in the preheated oven until cheese is melted, watching carefully to prevent burning, 3 to 5 minutes.
    4. Top nachos with salsa, sourcream, black olives, green onions, and jalapeno peppers.
    5. Put on gloves and carefully chop each of the hot peppers and place them aside.

    Once you have prepared the nachos split them into four sections and carefully place the different peppers on each section. Place the plate of nachos on a turntable or lazy susan. As you and your friends take enjoy drinks, s pin the nacho plate and whatever section lands in front of you, take one chip and try your hand at feeling the fire. If you are able to eat your way through these peppers you can crown yourself winner of Nacho Roulette.

      My after-school snack was a sacred ritual. I sat on the carpet in my parents' bedroom at a low table, the television turned to "I Dream of Jeannie," and ate a peanut butter and honey sandwich cut into neat squares.
