    Nachos: Should They Be Single Chips or in a Pile?

    I recently came across two blogs solely dedicated to reviewing nachos. Today Eater reported that one of them, Nachos NY, has expanded outside of NYC and gone nationwide so it can rate the cheesy offerings of restaurants from coast to coast. Nachonoche does the same, assigning the dish a rating of one to five sombrero icons.

    We'd like to encourage these writers on their noble quest, but first, there's a matter to be settled:

    Why do some restaurants think it's O.K. to serve nachos as single chips, each adorned with a separate garnish of cheese and toppings? Does anyone like them that way? That's how the nachos are served at Chili's (see photo above). The first/last time I ordered them there, I nearly cried.

    Hear this: Nachos should be as messy as a pile of NFL players five seconds after a fumble. Like below.

    A couple of side notes, while we're on the topic:

    1. For months, our restaurant editor and nacho enthusiast Andrew Knowlton has promised to host a "nacho party"--buy a million chips and ask guests to bring different creative combinations of toppings. We really wish he'd follow up with that. Also, see his 10 Rules of Making Nachos.

    2. Nachos have a hot sassy cousin that you might want to check out if you haven't already: chilaquiles. (That recipe is great.)

    3. I was not expecting Bon Appetit to have published a recipe for nachos in the past, but we have: Beef, Black Bean, and Corn Nachos. I especially like this Nacho Cheese Dip from 1999 that calls for Velveeta. (For this and other reasons, our recipe archives are truly a gold mine.)

      I dont care for individual chips, but i understand the complaints about all the stuff on top of the pile being wolfed down leaving naked chips. What i do is layer it. First a layer of refried beans, then a pile of chips, then cheese suce, tomatos, onions a few wayward blobs of guac and aboot a up of ao meat scatteredaround. Then i do it again. Its a supreme mess but so far no complaints.

      Oh and I'd also like to add that the cheese definitely needs to be a hunk of cheese (cheddar, jack) shredded and sprinkled on the plate of chips before they go in the oven, as opposed to drizzling disgusting liquid cheese over a pile of chips.

      If u check your food history, you would know that the original nachos when they were invented were served with toppings on individual chips which I think makes perfect sense. It makes each individual bite more worthwhile instead of a pile chips with some overflowing toppings and others without any at all. I'd saw it makes nachos more gourmet in that you can savor each bite instead of scarfing it down like nobody's business.

      I remember back in the 80's when Bennigan's served their Ultimate Nacho's... those were pretty bomb... they actually added shredded lettuce to their nachos; I guess after melting the cheese on a mound of chips with tons of toppings.

      Coogie's in Malibu are pretty good. Gotta eat 'em fast before the cheese gets cold.

      Island's restaurant's all over southern CA are really good too... Especially at happy hour... Ask for the Nacho's Works with Carnitas and Chicken... mound of chips with refried beans, melted jack and cheddar cheese, jalapeno's, tomatoes, guacamole, salsa, sour cream. It's pretty good.

      October 21 is declared the International Day of the Nacho honoring Ignacio Anaya who invented the dish in 194............one single layer of filled nacho.

      I love nachos that are individual chips topped with beans, cheese, jalapenos and other stuff. I hate a big pile with all the toppings on top and a soggy layer of plain chips at the bottom.

      I definitely prefer nachos single, like I used to get from Pulido's in Texas. You get all the toppings evenly spaced out and each bite is that perfect melty mess. In Iowa, I don't think anyone has caught onto that because it is a time-consuming preparation. But that's how I like 'em and that's how I make 'em.

      I don't care to have a pile of chips with the same amount of garnish as would be used on single layer. I enjoy the single layer much better and fix them at home this way!!

      History tells us that the first nachos were served as individual tortillas served with cheese (Wisconsin Cheddar) and a little hot pepper slice...through the years restaurants have gotten creative with different toppings which, in my opinion, should be embraced and loved - as all the nacho lovers in the world would do. I like BOTH versions! : )

      I remember going with my family for mexican food in The Houston Tx area in the mid 60's. They were individual corn chips with cheddar cheese and with a real pepper. They were toasted to perfection and Hot.
      These sissy nacho's nowdays are the fast food version and they are okay
      as a quick snack, but they are not the real true nacho's.
      Most of the time nowday's their not even served with the peppers, what a joke. These so called mexican establishment's do not serve mexican food, what a shame people nowday's missed out on the true flavors of years ago. Just Saying, from Texas.

      I disagree. You might as well just serve them single layer with a bag of chips on the side if they're all going to be in a pile. Every single chip deserves to be covered with nacho topping goodness. If I wanted 75% of the chips to be plain, I would have ordered tortilla chips. What ever happened to equal rights?? I thought we got over this years ago. An amendment needs to be added to the constitution to make sure every nacho chip from this day forward gets some topping, or it can not be called a nacho chip. Giving some chips all the toppings and others none is just wrong, and I won't stand for it.

      I'm with the group for somewhere n the middle. I don't want a ring of soggy chips, even if they ALL have toppings. Yet at the same time.... A pile has a bag of chips and just enuf toppings for half the bag! How about somewhere in the middle? Less chips and more toppings and create a middle layer of toppings then more chips and more toppings, but not more than the dish already has on it, same price. And to the comment about Taco Bell's Nacho Bell Grande... Love it!!! I add shredded lettuce, tomatoes, and beans to mine. Makes it a taco salad on chips, but if I order it that way, they dont understand the order, lol!

      Def. prefer the big pile o nachos. When you're sharing with a family or group, they satisy everyone: those who love lots of toppings, those who just like a hint and even those who prefer plain tortilla chips get something they like to nosh on.

      SIngle layer. I've gotten the kind that are in a pile and only the top has the suff. When I make them at home, I either do a single layer, or I will make like a lasagna and layer chips, stuff, chips, stuff.

      What about a combination of the two....a shorter messy pile of chips covered with cheese and then another layer with cheese. I find when a group is eating nachos when you get to the bottom there is no topping left so nobody eats them. I think a messy pile with a more evenly dispersed cheese and topping.

      I won't eat nacho's if they are made on individual chips. It makes the chips soggy and there's too much on it then. I prefer to pull chips from underneath the big pile of stuff and dip them in at the top. Yummy!
