- 4 eggs, whites and yolks divided
- 1/2 cup sugar + 2 tablespoons
- 2 cups whole milk
- 1 1/4 cups heavy cream
- 4 ounces high quality bourbon
- 1 teaspoon nutmeg, freshly grated

Place the egg yolks in the bowl of a stand mixer and whisk until it lightens in color. Slowly add the sugar and continue whisking until the sugar is dissolved and the mixture is pale yellow in color.
Place the milk, cream, bourbon and nutmeg in a saucepan and bring to a boil on high. Slowly pour the hot mixture in with the egg yolks and sugar, whisking constantly while doing so. Pour the mixture back into the saucepan and cook until the temperature reaches 160 degrees.
Transfer the mixture to a large pitcher and chill completely in the refrigerator.
Place the egg whites in a clean stand mixer bowl. Beat the egg whites until soft peaks form. Add 2 tablespoons sugar and continue beating until stiff peaks form. Fold the egg whites in with the chilled eggnog. Divide between glasses, garnish with nutmeg and serve immediately.
