    Pizza for Dessert?! How to Make Berry Dulce De Leche Mini Pies

    Berry Dulce de Leche Mini Pizza for DessertLet the cooking begin! My six-year-old daughter loves to "cook" and is always asking me to find recipes for her to make. We have realized we both enjoy spending time together in the kitchen so I let her help me slice bananas or soft cooked vegetables with a plastic knife, wash fruits and veggies, whisk batter or eggs and decorate desserts.

    These mini pizzas for dessert are in her list of favorites and are made with empanada dough rounds to cut preparation time. Find frozen empanada dough rounds in the Hispanic section of the frozen food aisle at the supermarket. I bake them and let my daughter top them with berries and dulce de leche (caramel) to her heart's content.

    Wouldn't these also be great as 4th of July desserts or as an activity for children at a party? Enjoy!

    Berry Dulce de Leche Mini Pizza for Dessert

    Ingredients:
    6 empanada dough rounds,
    thawed 1/2 cup dulce de leche
    1 cup sliced strawberries
    1 cup blueberries

    Variations: Use yogurt or nut butter instead of dulce de leche to turn these mini pizzas into breakfast.

    Directions:
    1. Preheat the oven to 400° F. Crimping the edges of empanada rounds to make mini pizzas

    2. Crimp the edges of the empanada rounds to make the "pizza crust", as shown in the picture.

    3. Put them in an ungreased cookie sheet and bake for 15 minutes or less. If, during the baking process, you start to see them puff, use a knife to let air out and use a kitchen spoon to deflate it.

    Remove them from the oven as soon as the tops start to golden.

    4. Let the empanada rounds cool and top them with the dulce de leche, and then fruit. After topping with fruit, you can drizzle them with even more dulce de leche!
