    Nothing warms up a chilly morning like a big, hearty bowl of oatmeal. I've been known to try out some creative oatmeal toppings in my time, but this healthy breakfast selection takes oatmeal in an entirely new direction-savory. Scallions, cheddar cheese, and an egg make it a crossover hit that'll be popular with oatmeal-lovers and omelet-addicts alike.

    Savory Oatmeal and Soft-Cooked Egg

    Serves 1

    Ingredients:
    1/2 cup quick-cooking rolled oats
    Coarse salt and ground pepper
    Nonstick cooking spray
    1 large egg
    2 tablespoons shredded sharp cheddar
    1 tablespoon thinly sliced scallion greens

    Directions:
    1) In a small saucepan, bring 1 cup water to a boil.

    2) Add oats and pinch of salt; stir, reduce heat, and simmer until tender, about 5 minutes.

    3) Meanwhile, heat a small nonstick pan over medium.

    4) Coat lightly with cooking spray. Add egg and cook until white is set and yolk is still runny, about 3 minutes. Season egg to taste with salt and pepper.

    5) Serve oatmeal in a bowl topped with cheese, egg, and scallion greens.
