    Shrimp & Broccoli Fettuccine Recipe

    A blend of shrimp, broccoli, fresh garlic and lemon juice in a non-dairy creamy sauce.




    Prep Time: 25 minutes Cook Time: 15 minutes Servings: 6
    Ingredients
    1 16 oz package whole wheat fettuccine 1 1/2 pounds uncooked medium shrimp, peeled and deveined 1/2 cup butter 1/4 cup minced fresh parsley 2 garlic cloves, minced 1 tablespoon lemon juice 1 cup chicken broth 2 tablespoons whole wheat flour 1/2 teaspoon salt 1/8 teaspoon pepper 1 package steamed broccoli
    Directions
    • Cook fettuccine according to directions
    • Cook broccoli per directions (I used a steamer bag)
    • In a large skillet, melt 4 tablespoons of butter over medium heat
    • Cook shrimp for 4 minutes or until pink
    • Add parsley, garlic, lemon juice, broth, salt and pepper
    • Add remaining butter
    • In a small bowl whisk flour into the remaining chicken broth until it forms a rue
    • Slowly stir in rue once butter is melted
    • Cook until bubbly and thick
    • Add in broccoli
    • Mix thoroughly
    • Serve over fettuccine
