Taste Test: Is Mexican Coke Better?

Photograph: Robyn LeePhotograph: Robyn LeeIf there's one thing this country is really great at, it's coming up with clever new ways to take what is a completely normal product, apply a bit of subtle psychological manipulation, convince people that it's something special, and sell it at a jacked up price.

I'm talking here about Mexican Coke, and I do so not without a hint of irony, because I myself am a firm believer in its superiority over regular old American Coke. I mean, how could it not be better? Real sugar instead of corn syrup. Glass bottle instead of aluminum or plastic. The cachet of seeing the words refresco and no retornableprinted instead of plain old pedestrian "refreshing."

But here's the thing. More than once in the past, I've discovered that the brain has a powerful effect on the taste buds. Free-range eggs taste better? Nope. Darker colored eggs taste better. Is New York pizza better when made with New York tap water? Nope. At least my panel of experts couldn't tell the difference. I've done tests where I've fed an entire room full of people two batches of identical carrots, labeling one as organic and the other as conventional. Unsurprisingly, they unanimously pick the carrots labeled organic as superior in flavor every single time, even when they are two halves of the same carrot.

Is it possible, however unlikely, that somehow we-the cult of Mexican Coke lovers-are all being hoodwinked? Does Mexican Coke really taste better? This week, we're gonna find out.

    Behind The Bottle

First off, before we even get to the tasting, let's examine the differences between regular old American Coke and Mexican Coke.

    • Mexican Coke contains: Carbonated water, sugar, caramel color, phosphoric acid, natural flavors, caffeine.
    • American Coke contains: Carbonated water, high fructose corn syrup, caramel color, phosphoric acid, natural flavors, caffeine.

For the purposes of my taste test there were a couple of criteria I had to set up first:

    • Mexican Coke would come in bottles, American coke would come in cans.Of the packaging widely available in America (plastic or aluminum), aluminum is less reactive, less porous, more opaque, has a longer shelf life, and is thus more likely to give me a product that simply tastes more like it should.
    • All Coke must be served ice cold. Bottles and cans would be stored in the fridge then placed in an ice water bath for at least 1 hour before tasting.
    • All Coke must be as fresh as possible. According to Annette, canned Coke and Mexican glass-bottled coke both have a shelf life of 9 months (plastic bottle coke, on the other hand, starts losing bubbles after a mere 10 weeks). I managed to find cases of Mexican Coke and American Coke with expiration dates within a week of each other next April.
Here's what I tested in my first round. All tests were carried out completely blind. Tasters were brought one at a time to taste and did not discuss their answers with either myself nor any of the other tasters until all responses were completely collected. For each taster, tests were administered in a completely random order (both in terms of test order and sample order), and fresh bottles and cans were opened for each taster. In cases where liquid had to be poured from one vessel to another, the utmost care was taken to ensure a minimal loss of carbonation. Tasters were asked to pick their favorite from within each sample set of two.

The Tasters and the Feelers Photograph: Robyn LeePhotograph: Robyn LeeThe spread of results I got from this initial testing was surprising to say the least, and answered one thing for sure: There is a perceivable difference in the flavor between Mexican and American Coke, despite the best efforts of the Coca-Cola company to convince us otherwise.

So that settles it. America reigns supreme in the Coke flavor wars, right? Not so fast. Looking closer, we see something even more interesting: Half of the tasters seemed to have no real preference between American and Mexican Coke, while the other half of the tasters unanimously chose American Coke as their favorite for nearly every test, regardless of the vessel it was served in. We'll call these folks the Tasters-the ones who let their tongues and noses do all the deciding.

The Tasters pick out American Coke as superior to Mexican Coke a full 7 times out of 8.

When you take the Tasters out of the pool in order to determine what the other half are basing their tasting decision on, everything becomes clear: the other half of the tasters unanimously picked Coke served out of a glass bottle as their favorite for nearly each and every test, regardless of whether the liquid in there was Mexican or American Coke. We'll call these folks the Feelers-the ones who care more about the tactile sense of the bottle against their lips or in their hands than the minor differences in flavor or aroma that the product inside may have.

So just to sum up here:

    • People prefer American Coke to Mexican Coke from a pure flavor and aroma standpoint.
    • People prefer glass bottles to aluminum cans from a purely tactile standpoint.

I much prefer Mexican Coke. I discovered it when I was looking for a way to get away from HFCS and there is a definite taste difference. It took a little while to get used to it, but regular USA Coca Cola tastes too smooth and sweet to me now.

German Coke is better Katie, because, like it's Mexican brother it's made with Sugar and not that garbage corn syrup. In fact, ANY coke product outside the US is made with sugar and a thousand times better than the crap sold in the States.

And here I thought we were gonna be testing coke...

One thing is for certain...soda made with real sugar and a bit less carbonation tastes MUCH better than corn syrup and the high carbonation that deadens your taste buds! Not any different than cheap american beer, and it having to be ice cold in order to drink it.

But hey...Americans are addicted to price, quality and content...not so much.

you ever have real swiss chocolate, much better than the Americanized fat reduced chocolate we have. Same with Italian gelato. Americans calling our pathetic ice cream gelato should be a crime.

The writer of this story was incorrect about one test. The water used in NY to make NY pizza's does in fact make a great difference. Not to long ago they had a show on with three famous chefs and all three of them picked the NY pizza out of the three sampled. One from LA one from Chicago and the one from NY. The made the LA pizza with actual LA water and the same for the Chicago pizza made with Chicago water. Know your facts MR WRITER before you speak

Why bother tasting? Sodas are bad for you.

An assumption seems to have been made that the manufacturing process and raw ingredients of the two products are identical except for the packaging and sweetner. I find that hard to believe and would expect the other differences to play a role in the participants' preferences. I've never had Mexican Coke and do not plan to but I didn't drink bottled Coke from any source except from a fountain. My poison of choice was Dr. Pepper bottled in Dublin, TX from Imperial Pure Cane Sugar. Much smoother going down. The reason I speak of this in the past tense is because these days I have a blood sugar issue that precludes me from giving a crap who wins the taste tests an eventuality some of the respondents to this article might take to heart.

My grandfather had the original Coke in the bottle, that I drank as a kid. I prefer the original Coca-Cola with sugar cane than corn syrup any day of the week. And it has to be in a bottle, I don't like drinking from a can, and I hate drinking from a plastic bottle. If there isn't a bottle, I'll poor it in a glass with ice. Sugar cane is more natural, and I prefer it in Coke(like Mexican Coke). Also Dr Pepper in a glass bottle(from Europe), made with sugar cane, and all the other colas that come with natural sugar cane- instead of that corn syrup are my preference. I think this article's comparison was total crap. Who were these supposed people? How many times did they do this test, what was the geographic locations, etc.,. I think if you test enough times in different locations, you would find people preferred the healthier old style sugar cane version. Not to mention, why hide which is which? We all know that corn syrup is bad for us, and sugar cane is the more natural choice. Give people ALL the information, and let them decide instead of this trivial taste test crap. And when it comes to glass, aluminum, and plastic, it all comes down to their profit margin and cost of production. Everything was better when it came in glass. We all know plastic is cheap for them but the BPA chemicals can seap into our sodas, bottled water, etc.,. but why do they continue to use plastic instead of glass like they did back in the old days, very simple... "expense"- it costs them. So they save money, to make money - at the expense of your health. So is corn syrup cheaper for them than Cane Sugar? It wouldn't surprise me....

I think this experiment is flawed. It's like the new coke fiasco. People like the sweeter substance from a small taste test but for drinking larger amounts mexican coke wins

I don't know who your taste testers are, but I would pick Mexican Coke in a blind taste test. I can't stand the HFC flavor. After discovering Mexican Coke, I can't even drink the American stuff anymore - regardless of the container it comes in. I would love to be tested - I know I can taste a difference!

Mexican coke is much much better! why can't we change American coke and make it taste like Mexican, also coke in glass bottles! yes!
    • The Professor  •  8 months ago
I am bemused by the responses that basically say "I don't care about the data, my opinion is correct regardless of the facts." I suspect this is fundamental human nature - our beliefs are more powerful than our ability to accept experimental results that don't agree.

The taste test just isn't scientific because it was done in America. I like my mom's pot roast better than all others. Why? Because I GREW UP with it. The same will be true for America's preference for American coke. Realizing that makes the entire question/study absurd. I bet American made enchiladas taste better to Americans then Mexican made enchiladas. Who is the intellectual giant who thinks of these studies? Elmo...if you're back there...we can hear you giggling!

From one of the local Coke distributors in my area they actually still make the regular American coke in 10oz glass bottles.......only picked up directly from the distributor. They said they are one of the only or the only one(s) in America that still fills the bottles. They do Coke, Diet Coke, Fanta orange, Mellow Yellow and a couple others. :) love it!

      why i prefer mexican coke
      less bubbles
      less sugar9tasteslike the original coke
    • P'lod_the_Alien  •  8 months ago
High fructose corn syrup is disgusting. Maybe people are paying more for Mexican soda not because they're being tricked by advertising into thinking it's better, but because real sugar IS better than that garbage.
