    Our Tips and Recipes for Preparing Canned Black Beans

    Ortega Black Beans Ortega Black Beans For this month's issue of Good Housekeeping, we conducted a taste test of canned black beans, a convenience ingredient we never feel guilty about using.

    In our test of 10 nationally available products, Ortega emerged as the winner. As I was tallying the results and reading over tasters' comments, I picked up on a pattern. Tasters were craving salt and Ortega, while it contains an average amount of sodium, definitely tasted the saltiest. It's really no wonder the tasters preferred a saltier bean. When salt is cooked into the bean, the result is a much tastier, "beani-er" flavor. This can't be replicated by simply adding more salt to your final dish. The beans will still taste flat if they weren't seasoned properly before being canned.

    Of course, if you're watching your sodium intake, there are reduced sodium and low sodium options out there. Here in the Good Housekeeping Test Kitchen, we like Goya's Low Sodium line of beans, but if you need to cut even more sodium go for "No Salt Added" beans. You can also cook up a big batch of dried beans and keep them frozen in pint containers covered with the cooking liquid.

    Another easy way to reduce sodium from canned black beans without reducing the flavor is to rinse and drain the beans thoroughly before using them. This simple step can reduce the amount of sodium anywhere from 25-40%. Rinsing also gets rid of the goopy, muddy tasting liquid that clings to all canned beans.

    Cuban Steak and Black Bean Salad Here are 4 of my favorite recipes that feature this humble legume:

    1) Black Bean Chorizo Nachos: This tasty, meaty treat is perfect for your Cinco de Mayo party or any other casual get together. To make a big batch, simply place all the chips in a single layer in a large casserole dish and sprinkle the chorizo, beans, and cheese over the chips. Top with chopped jalapenos (instead of slices) before baking.

    2) Cuban Steak and Black Beans: For a healthier option, try this low-cal heart healthy steak dinner gets a protein and fiber boost from black beans.

    3) Tangy Tortilla Toss: Inspired by chilaquiles, this full-flavored dish of crisp tortillas combined with vibrant green salsa, meaty beans, and cooling sour cream also makes a great breakfast with scrambled or fried eggs on top.

    4) Black Bean Sweet Potato Chill: The sweet potatoes go well with the spices and meaty black beans in this unique take on a classic. Spoon leftovers onto tortilla chips and top with shredded cheddar and chopped green onions for quick and easy nachos that your guests will rave about.
