    Try: Healthy Breakfast Pizza

    When I read that nearly 40 percent of Americans have consumed cold, leftover pizza for breakfast my reaction was more "Yum!" than "Ew." I love pizza, and would gladly eat it for breakfast! In fact, sometimes I do - check out my healthy breakfast pizza recipe after the jump.

    Breakfast Pizza


    Ingredients
    1 whole wheat pita
    1/2 tsp olive oil
    1 tbsp almond butter
    3 tbsp part-skim ricotta
    1/4 tsp cinnamon
    1 cup bright, fresh fruit (sliced strawberries, blueberries and kiwis work well)

    Directions
    Heat oven to 450. Brush whole wheat pita with olive oil, place oiled side up on a large baking sheet. Bake until slightly browned, about 5 minutes. Spread with almond butter, dollop ricotta on top. Sprinkle with cinnamon and cover with fruit. Enjoy!
