    Vegan Cashew Stuffed Mushrooms

    This recipe is easy enough for you but also fancy enough to impress foodies. Give it a go - let us know how it turns out!

    What You Need

    2 dozen button mushrooms, stems removed
    3 tablespoons olive oil
    1 ripe avocado, peeled and pitted
    1 tablespoon fresh thyme, chopped
    2 teaspoons agave nectar
    2 tablespoons cashews, chopped
    ½ teaspoon orange zest
    Juice of half an orange
    2 tablespoons ground flax seeds

    How to Make It

    Preheat oven to 375 degrees F. Drizzle mushrooms with 2 tablespoons olive oil and rub to coat. Combine all remaining ingredients into bowl and mix thoroughly with a fork to combine. Stuff mixture into the mushrooms.

    Bake mushrooms for 30 minutes. Remove from oven; set aside to cool before serving. Serve warm or chilled.
