    Vegan Chocolate Mousse

    Carolyn "The Healthy Voyager" Scott-Hamilton Turns Three Ingredients into a Tasty Dessert

    I love a good challenge. So when the gals at HBD gave me three ingredients and said make us a good recipe. I said, Bring it on. The players? Avocado, mint and strawberry. The result? A delicious vegan chocolate mousse dessert that persuaded me to skip dinner altogether.

    I have made raw vegan chocolate mousse in the past with avocados so I immediately thought of mint chocolate pudding. And what's better in chocolate pudding then chunks of strawberries?! Umm, nothing. This recipe is also gluten free with a low glycemic index, and can be made raw (sub raw cocoa powder and raw agave). A decadent summertime dessert suitable for all special diets!


    Hat Trick: Chocolate Mint Mousse

    Serves: 2

    What to Buy:
    1 pitted and peeled avocado
    3 tablespoons cocoa powder
    1/3 cup agave nectar
    1/2 teaspoon sea salt
    2 teaspoons vanilla extract
    1/2 teaspoon mint extract flavoring
    1/2 cup water (add small amounts incrementally if more is necessary to blend)
    Fresh strawberries, washed and sliced
    5 to 6 fresh mint leaves

    How to Make It:
    In a blender, mix all of the ingredients until creamy, no chunks. Scoop into serving bowls and garnish with fresh strawberry slices and mint leaves. Enjoy!
