Whatever Floats Your Oats: Homemade Peanut Butter & Almond Granola

This is the best granola you'll ever eat! My husband eats granola every morning with his yogurt. Even though I've bought the healthy, expensive brands, he prefers a more common label. It's not that I don't mind inexpensive, but this name brand is also full of sugar, high fructose corn syrup (HFC) and other additives. Granola is supposed to be healthy and his brand is anything but. Since I'm diligent at ridding my cupboards of HFC, I have been threatening to make my own granola, and I finally did. I don't know why I put it off for so long. This granola was incredibly easy to make and the taste is husband-approved! My teen son also loves it and has been making Greek yogurt parfaits daily. I love it, not because it's delicious, but because it has a bit of protein and doesn't have any refined sugar or additives.

Ingredients
2 tablespoons butter
1/3 cup peanut butter (creamy or chunky)
1/3 cup honey
1/3 cup sliced almonds
1/2 teaspoon vanilla
1/4 teaspoon sea salt
3 cups rolled oats

Directions

1. Melt your butter, peanut butter and honey in a medium sauce pan over medium heat.
2. Add vanilla and salt.
3. Add rolled oats and sliced almonds. Stir to cover completely.
4. Spread out evenly onto a cookie sheet. I used a one with a slight lip.
5. Bake for 5 minutes at 375 degrees. Stir and bake another 5 min. Watch carefully.
6. Stir and then broil for 10 min. Watch carefully so you don't burn it.
