    BBQ v. Grilling: What's the Difference?

    What exactly is the difference between barbecue and grilling? Some people think barbecue is a sauce, or anything that comes off the grill, but technically, barbecue is a method of cooking just like grilling is. The only difference is the length of time and the amount of heat.

    Barbecue
    Long, low, and slow. The low temperature and the resulting length of time the meat is cooked allows for the food to soak up the smoke and rub flavors, and to become very tender and moist. Think ribs, pork shoulder, and brisket as barbecue.

    Grilling
    This is the method with which most people are familiar. It is the method of cooking food hot and fast on your grill. Burgers, chicken, steak, and seafood are typically grilled, but you can also grill vegetables and even fruit.

    Barbecue v. Cookout
    When a Southerners says "Y'all come on over for a BBQ!" it means you're going to be chowing down on juice ribs, pulled pork sandwiches, and the traditional sides of coleslaw, banana pudding, and tea (the sweet version, of course). Northerners tend to use the "BBQ" term for what Southerners usually consider a cookout-hot dogs and burgers.

      thankx for writing abt da difference between Grilling & Barbecue. Because an article "Cooking Techniques- the Basics!" from LA's Best Dining Magazine didn't write anything on Bar-B- Q. These are the techniqes: Baking, Braising, Grilling, Roasting, Poaching, Saute, and Stewing.

      Geez, I am so sick of reading most of the responses on any article; everyone's a critic and obviously so much better than everyone else. Just read the article, and if you learned something, great, if you didn't give yourself a pat on the back for being the world's smartest person and should take to writing your own articles about your vast knowledge of everything. LOL

      Here in the Heart of America Kansas City....... BBQ is always Low and Slow. Grilling is hot and fast. As we have many BBQ Legends here (Haywards BBQ) (KC Master piece) and to MANY OTHERS to list. Ya all come to the Heart and get some real BBQ!!!!!!!!!!!! BEST WISHES FROM KANSAS CITY!!!!!!!!!!!!!!!!       Indirect heat ? wth ? BBQ is done with a smoker that has a grill and the heat is direct because the smoker is sealed. The fire/flame or smoldering charcoals may be less direct, but the heat generated is direct and used to slow cook the meat. A traditional propane grill is designed differently and even with that the flame has to be controlled for a certain temperature. You really don't even need a smoker to make bar-b-q, you can make a solar oven that will cook the meat similarly, but without a smokey taste as there isn't anything ignited or burning. The wood chips that are used for hickory flavor, that's placed in a bowl of water, Google a grill, smoker and solar oven and see that the differences in design of the cooker and the temperatures involved make a solar oven and smoker work similarly. Smokers cook between 165-185* F, while solar ovens can get as hot as 300* F. Under the right sunlight conditions, you can cook food on the dashboard of your car. I painted a bike frame with engine enamel and devoid of being able to let an engine temperature cure the paint, I left the car in direct sunlight during the summer for a day or two and let that cure the paint.

      Kim...you don't have a clue. As the article says, BBQ is long, low and slow, versus grilling, which is hot, fast, and direct. Indirect heat is not only for smoking, nor is smoking only done with indirect heat.

      There's no discrimination for what makes a BBQ so fantastic. It's the chef and company that makes it awesome! The method of cooking and ingredients involved as well as the preperation of the grill is enticing! South, North, East, West... all the same as long as it's done with an open heart and knowledge!
