Take a break from comfort food.If you can't stomach the thought of "Thanksgiving Dinner - Part 2," why not add a light alternative to one of your leftover sides? We're thinking roasted cherry tomatoes. Baking them really brings out the flavor, and you'll be grateful for the break from heavier holiday fare.
4 pints cherry tomatoes (heirloom varieties are especially nice)
2 tablespoons extra virgin olive oil
1 large pinch salt and pepper
1 handful basil leaves, sliced thinly
1. Preheat oven to 425°. In a large baking sheet with sides, toss tomatoes with olive oil and salt and pepper.
2. Roast for about 15-20 minutes, or until tomatoes are soft and beginning to brown in places. Place in a serving bowl and top with basil and another drizzle of oil, or some Parmesan cheese, if desired. Serve hot or at room temperature.
