    Money Saving Tip #19 Utilize Your Microwave for Freezing Veggies

    Each day I eagerly wheel my little wagon down to the garden to fill it with the bounty of fresh homegrown veggies. My refrigerator is packed full of squash, cukes, swiss chard, etc and now beets. Beets are root vegetables and keep well in the frig but with the amount I get, I also freeze some so my family can enjoy them throughout the winter months and also it frees up some room for other items.

    To freeze your vegetables, you have to blanch them which usually steams up the kitchen because of the boiling water. Beets are the worst. You have to boiling them whole with the skins on for 30-35 minutes until they are fork-tender. Dreading the idea of adding any more heat and humidity to the house, I thought there must be a better way.
