Father's Day: Now With More Bacon

In honor of Father's Day, chef Stuart O'Keeffe stops by to show how bacon can make everything just a little bit better. Whether you're preparing breakfast in bed for dad or prepping some celebratory snacks, he's sure to love these craveworthy bacon-centric recipes.

Bacon-Stuffed Pancakes
Yield: 10 pancakes

Ingredients:
• 1 cup all-purpose flour
• 2 tablespoons sugar
• 1-1/2 teaspoons baking powder
• 1/2 teaspoon salt
• 1 cup milk
• 2 tablespoons canola oil
• 1 egg
• Cooking spray
• 5 strips cooked crispy bacon

Method:
1. Preheat oven to 150°F to keep pancakes warm after cooking.
2. Mix dry ingredients together in a bowl.
3. Mix wet ingredients together in another bowl, and then add in the dry ingredients, mixing lightly (some lumps are OK).
4. Heat a large nonstick skillet over medium heat.
5. Spray a light coating of cooking spray on the skillet.
6. Spoon 3 tablespoons of batter onto the skillet, using the back of the spoon to spread the batter.
7. Place 1/2 a strip of bacon on each pancake, and then drizzle about 1 more teaspoon of batter on top.
8. Cook until the batter surface forms some bubbles, and some burst.
9. Flip each pancake carefully and cook for another 1–2 minutes.
10. Transfer the pancakes to a baking sheet and keep them warm in the oven.

Maple-Candied Bacon

Ingredients:
• 10 slices streaky bacon
• 3 tablespoons brown sugar
• 2 teaspoons cayenne pepper
• 3 tablespoons maple syrup

Method:
1. Preheat oven to 190°C.
2. On a baking sheet lined with parchment paper, lay out the bacon slices, making sure they do not overlap each other.
3. Sprinkle the brown sugar and cayenne pepper onto the bacon.
4. Bake in the oven for 20 minutes. Remove from the oven, then drizzle with maple syrup. Place it back in the oven for 10 more minutes.

Parmesan-Stuffed Dates Wrapped in Bacon

Ingredients:
• 12 Medjool dates
• Parmesan cheese (cut into 1/2-inch chunks)
• 6 slices bacon
• Toothpicks

Method:
1. Stuff the dates with Parmesan cheese.
2. Wrap each date with 1/2 a slice of bacon.
3. Secure with a wooden toothpick.
4. Place on a nonstick baking tray at 375°F for 15 minutes.
5. Let it cool for 5 minutes, and then serve.
