While a whole grain English muffin is toasting, coat a microwave-safe cereal bowl with olive oil cooking spray. Drop in an egg and use the shell to break and swirl the yolk. Season and pop in the microwave for 30-40 seconds. Top with baby spinach and a slice of cheese. Microwave an additional 10 seconds and serve on the toasted English muffin. Read More »
