On May 5,1862, 4,000 poorly-armed Mexican soldiers defeated an army of 8,000 French forces near the town of Puebla (which is about 100 miles east of Mexico City). Since then, Cinco de Mayo has been observed the world over as a celebration of Mexican heritage, pride, and general awesomeness. It's also an amazing excuse to eat authentic enchiladas, guacamole, and burritos and to wash them all down with a few cervezas.

Tomorrow is Cinco de Mayo—olé! We’re way too busy this week to throw a proper dinner party on a Tuesday night. Plus it’s a “school night,” so we’re just going to have friends over for a low-key margarita and chips-and-salsa party on our deck. It’s a good excuse to get together and unwind after work. Cinco de Mayo means it’s time to bust out some of your favorite Mexican recipes and start pouring the margaritas. I like my margaritas on the rocks, with salt, please. And I prefer to make them with fresh lime juice—forget the premade mix.
