I went to a cocktail party recently and brought along a platter of these EatingWell Deviled Eggs. Let me preface this by telling you that I made a double batch with 24 eggs (48 halves) and I went to a party with about 10 people. When I walked in, people started rushing me…not to say “Hi,” give hugs and kisses, etc. Instead it was more like a stampede with exclamations of “Oh my god, you made deviled eggs!” “I was going to make deviled eggs and I didn’t. I’m so glad you did.” People were grabbing the little puppies straight off the platter. I was just standing there, still in my coat, with my bottle of wine in the other hand, trying not to drop anything. That platter was clean 15 minutes later. My boyfriend LOVES deviled eggs. He first tried them a few years ago at my parents' house, and it was love at first sight. Er... taste. (Should I be jealous?) My mom knows this, so every time she has hard boiled eggs and he's around, she makes some deviled eggs just for him. Even when we were younger, we always had deviled eggs for every celebration - birthdays, Easter, Fourth of July, New Year's Eve... we loved them! Eggs, potatoes, Honeybaked Ham. Asparagus, spinach dip. Oh, and of course chocolate. Those are the essential elements to an Easter with my family. Not a single Easter Sunday goes by without all of these foods involved in some way. Of course there are Easter eggs, which at our ages we still decorate and hunt for, and later turn into deviled eggs, potato salad, and egg salad. We always have scalloped potatoes, which slowly cook in the Crock pot all day and by dinner are torturing us with the amazing smells! And, of course, the Honeybaked Ham. An Easter tradition, although in recent years we have been buying smaller hams since we aren't all at home to eat up the leftovers anymore. And always, always my mom's spinach dip! Seriously, the best spinach dip in the world. I'm not kidding. I'll put the recipe up later, and you will see just how easy and delicious it is!
