THE RECIPE: Chard and Salami Frittata (See Bridgette's version HERE)
I have to confess that I have never made a frittata before, which is a shame now that I've discovered how foolishly simple it is to make one. Oh, the wasted years!
But I have an excuse. All the time that I could have been making frittatas, I was making Spanish tortilla con papas (or as my family calls it, Spanish tortilla), a potato, onion and egg omelet (and vestigial dish from my childhood as a military brat in Madrid), which, while delectable, is far more messy and time-consuming.
