The secret to crispy, healthy tacos.Carolyn Casner, one of our recipe testers here in the EatingWell Test Kitchen, grew up on the border in El Paso, Texas, so she knows Mexican food. According to her, “the world’s best tacos come from Julio’s Café Corona, where my family and I always went after church. They’re greasy, messy and delicious.”
When Carolyn visits Texas, she always heads straight from the airport to Julio’s. But when she’s at home in Vermont, Carolyn, husband Jeb Wallace-Brodeur, a photojournalist, and son Aidan, 9, have their own easy homemade taco night on a regular basis.

Delicious: Ceviche! It means "delicious" in Spanish
The first time I ever had ceviche was in the Mission district of San Francisco. A few weeks ago, Los Angeles County supervisors passed a new law restricting taco truck vendors from selling their goods in any one location for more than an hour. Breaking the law means a $1,000 fine and/or six months in jail. Read More »

Chipotle: Winning Friends One Burrito at a Time
I was marching down New York's Amsterdam Avenue trying to do two
things at once—get a little exercise and not be late to the
dentist—when my tracks were blocked by the kind of crowd last seen when
Sex in the City was filming here. Just looking at the hordes of people
forming a wide,... Read More »- Let’s talk: Comment (11) | Blog

Baja Fish Tacos!
Fish tacos emerged in the 1950s in the Baja city of either
Ensenada or San Felipe; it’s an ongoing debate, with both cities
claiming to be the ‘home’ of the fish taco. From their tiny stands,
street vendors in these cities produced simple, cheap food fast. All
you will need to make this... Read More »- Let’s talk: Comment (2) | Blog
