Down Under, the bunny has a nasty rep for being a crop-destroying pest. So on Easter Sunday, Australian children get their chocolate eggs from the Easter Bilby, an endangered indigenous rodent with rabbitlike ears. Hot cross buns, traditional sweet buns marked with a symbolic cross, are fixtures on Easter Sunday tables and the name is a very literal one: Before baking, crosses are scratched into or added atop the round, briochelike pastry to symbolize the crucifixion of Jesus. Still, the big eating event of the season is really Pancake Tuesday. Celebrated weeks earlier on the Tuesday before Lent (the same day that Mardi Gras is celebrated in many cultures), Shrove Tuesday (or Pancake Tuesday) is considered a major part of Australia's Easter tradition, when pancakes are eaten in abundance prior to the 40-day Lenten period of abstinence. less
