IT IS THAT TIME OF YEAR AGAIN....St. Patrick's Day is around the corner and one of the happiest and fun days of the year. I love the outfits, the spirit, the drink and of course the food.


I love Corned Beef and Cabbage. I love it boiled, baked, crock - pot cooked and I have even had it deep fried. WHAT DO YOU MAKE FOR ST. PADDY'S DAY?



THE LEFT OVER CORNED BEEF YIELDS ONE OF THE MOST POPULAR SANDWICHES OF MOST DELIS.


My Dad always liked an Irish Stew And Dumplings.............and he made the best.





I always found the best part of the stew was the bread for dunking and wiping up the gravy.





My deceased Mother in Law would have nothing to do with Corned Beef and Cabbage. She was from Sligo, Ireland and came to visit once a year and every night I had to make COLCANNON, a lovely and delicious combination of mashed potatoes, sauteed cabbage and fried bacon. The coup de gras was the well to pour melted Irish butter into. She had her last bowl of Calcannon at my home before she went to meet her maker...who she spent her entire life praying to get back to.



She never had a problem with downing a slab of my famous Bailey's Irish Cream Cheesecake...OR


This divine Irish Cream Topped Brownie dessert



AND washing it down with a Virgin Irish Coffee.............an Irisher who didn't drink...ever!!!



ME.............I love my Guinness. Ever since I learned that it was offered to women in the process of delivery in the maternity ward in Ireland, I put two thumbs up and enjoyed the thick heart warming brew on St Pats..............I do hold a title in another category........



Once a year I have to work hard to hold my title of Irish Car Bomb Winner. It is only once a year people so relax. As one reporter observed, " She has no gag reflex, apparently". Hahahahaha!!! I refuse to be beaten.




So, although my family is from Waterford, Sligo and County Cork, my dream is to sit my sorry Irish bum right there, in Kinsale, on that bench. HOPEFULLY, in the future, on St. Patrick's Day.
