My whole family loves banana bread and I've tried dozens of different recipes, from sweet potato banana bread to chocolate chip banana bread. Some are simple, some are fairly complex, but we like pretty much all of them. This one, though, is the one we always come back to. It has only eight ingredients, mixes up in one bowl, and comes out with a soft, tender center and a nice, crispy crust on top. Plus, it's easy enough for children to help out with, whether it's mashing the bananas or mixing up the entire thing on their own!

This recipe is great for on-the-go school day breakfasts or packed in a lunchbox as a sweet side to string cheese and cut-up fruits and veggies.

Ingredients
3 medium bananas, very ripe
1 egg
1/2 cup oil (I like liquid coconut oil best)
3 Tablespoons buttermilk
1 1/2 cups flour (all-purpose or white-wheat are both great)
3/4 cup sugar
1 1/2 teaspoon baking soda
1/4 teaspoon salt

Directions
1. Preheat oven to 375 degrees. Grease a standard size loaf pan.
2. In a large mixing bowl, mash bananas until fairly smooth. Add egg, oil and buttermilk and stir well to combine.
3. Pour dry ingredients over the wet mixture, one on top of another, making sure the baking soda is completely on top of the other dry ingredients, instead of touching the wet ingredients. Whisk together just until combined.
4. Pour into prepared pan and bake for 45-50 minutes, or until a toothpick comes out clean.
