    Beans and Pasta with Tomato Sauce ....Simply Delicious

    A very easy and quick meal everyone will love, the flavors are wonderful!
    3 tablespoons extra virgin olive oil
    3 cloves garlic, minced
    1/4 teaspoon garlic powder
    2 fresh basil leaves chopped
    1 teaspoon dried parsley or 1 1/2 teaspoon fresh parsley
    2 lbs fresh tomatoes, peeled, seeded and put through the food processor
    1/2 cup white wine
    2 cups cooked white beans ( I used navy beans)
    salt and pepper to taste
    pinch of sugar
    1/4 teaspoon cayenne or red pepper flakes
    1/2 pound penne pasta cooked separately al dente
    grated Romano cheese for the top

    Heat the oil in a skillet or saucepan over medium-high heat. Add the garlic saute till golden brown. Remove garlic. Add all spices, salt and pepper to taste, add a dash of sugar.
    Add the tomatoes, reduce heat to medium and simmer for about 10 minutes.

    In the meantime boil water for penne pasta, cook till al dente, set aside.

  • Dad was taken too soon, for me he never got old. Yep, I was Daddy's little girl and he was my best friend.
    Really, no matter how old your dad gets, its still too soon when they pass away, there is never a time in your life your ever ready for this.
    Dad passed at 82. He was still lifting weights at that age, playing golf, stayed in great shape and had no known illnesses. Fathers Day weekend back in 1995, I went to mom and dads house with my two small boys to take them to my brothers around 2 hours away.     This is been a great year for our garden here in Florida, I can't get enough recipes for all these plum tomatoes, I couldn't wait to share this light but perfect brunch, or dinner with everyone, it's a family favorite for years! Can you tell how proud I am of these babies, I think it's my third picture, I can tell you one thing, I have never had luck growing my own produce, animals always eat them!   • Sweet Potato Pudding

    Sweet Potato Pudding Recipe


    2 1/2 cups baked sweet potatoes peeled, boiled and mashed ( you can use canned if preferred)
    1/2 cup packed light or dark brown sugar
    4 large eggs
    1/3 cup half and half or evaporated milk
    2 tablespoons butter, melted
    1 tablespoons pure vanilla extract
    1 tablespoon corn syrup, preferably dark
    4 tablespoon light or dark rum
    1/2 teaspoon salt
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground ginger
    Praline topping, recipe follows

    Directions
    Preheat the oven to 350 degrees F. Grease a 1 1/2-quart baking dish.
    With an electric mixer, beat together all the pudding ingredients until smooth and light. Pour the pudding into the baking dish. Transfer to the oven and bake for 25 minutes.
    Sprinkle the praline mixture over the pudding and bake for an additional 20 to 25 minutes, until the pudding is set and slightly puffed.
