  • Spicy Grilled Burger Sauce

     Try this grilled spicy sauce on your next burger! You won't be disappointed.

    Grilled Spicy Sauce For Burgers

    Special Equipment: Small food processor or blender


    ½ cup Mayo

    ½ tsp. salt

    ½ tsp. pepper

    ½ tsp. smoked paprika

    1 lemon, halved

    1 red jalapeno, halved


    Preheat grill to medium high heat. Clean and oil grates.

    On the heated grill place the lemon halves cut side down and grill for 5-7 minutes or until charred. Grill the cut jalapeno for 4-5 minutes or until softened and charred as well. Remove from heat.

    In a food processor or blender combine the mayo, salt, pepper, paprika, juice from one half of the lemon and the jalapeno. Blend until smooth and combined. Check for seasoning adding more grilled lemon juice if needed.

    Pour into a bowl and let sit for 30 minutes for flavors to meld.

  • The Perfect Grilled Burger

    Culinary Tips:

    --Be sure to let the meat come up to room temperature before putting the burgers on the grill!

    --When forming the patties, press a small depression into the middle of them; this helps them cook evenly when on the grill.

    --Whenever you're finished handling raw meat, be sure to wash your hands thoroughly afterwards.

    --Always oil your grates with a high-temperature oil such as vegetable oil.

    The Perfect Grilled Burger

    Serves 4


    1 ½ pounds ground chuck (80% lean)

    Salt and Pepper, for seasoning

    2 tbsp. Worcestershire sauce

    Vegetable oil, for oiling grates


    4 pretzel buns

    4 slices white cheddar cheese

    4 leaves butter lettuce

    1 avocado, ¼ inch slices

    ½ cup Grilled Sauce



    Sliced pickles

    Sliced olives

    Sliced heirloom tomatoes

    Grilled onions

  • Spicy Citrus Margaritas

    Chef and host of Grill Next Door Megan Mitchell makes a batch of spicy margaritas - perfect for any grillout!

    Spicy Mixed Citrus Margarita


    ½ cup orange juice, freshly squeezed (about 2)

    ½ cup lime juice, freshly squeezed (about 3-4)

    ½ cup Meyer lemon juice, freshly squeezed (2-3)

    ½ cup grapefruit juice, freshly squeezed (1)

    1 ½ cups tequila blanco

    1 jalapeno, thinly sliced

     ¼ cup agave nectar

    Optional Garnish:

    Edible flowers or orchids and lime slices


    In a glass add 2 slices jalapeno and 1 tbsp. agave. Muddle to breakup the jalapeno.

    To that add 1 ounce orange juice, 1 ounce lime juice, 1ounce Meyer lemon juice and 1 ounce grapefruit juice. Stir to combine. Add 3 ounces tequila.

    Top off glass with ice and stir. Serve immediately.

    --Use metal skewers instead of bamboo! No need to soak, and they're reusable.

    --Be sure to time the skewers going on to the grill if you want to pull them all off at the same time!

    Grilled Chicken, Shrimp and Vegetable Skewers

    1 pound peeled and deveined medium shrimp with the tails on, rinsed

    Grilled Spicy Broccolini

    Serves 4


    2 pounds or bunches broccolini

    Salt and pepper, for seasoning

    Vegetable oil, for greasing and coating

    1 Meyer lemon or regular lemon, zested and juiced

    1 tsp. red chili flakes

    2 tbsp. Good olive oil


    Preheat grill to medium high heat. Clean and oil grates.

    Clean and trim the woody ends, if any, on the broccolini. In a bowl toss with a drizzling of vegetable oil and a sprinkle of salt and pepper.
