Three Healthy Snacks to Beat the Wintertime Blues

Chili-Lime Popcorn
Serves: 8

Ingredients
2 tablespoons vegetable oil
1 1/4 teaspoons chili powder
1 1/4 teaspoons ground cumin
1/2 teaspoon coarse salt
1 tablespoon finely grated lime zest
1 large lime wedge (about 2 limes total)

Directions
1. Heat 1 tablespoon oil with 3 popcorn kernels in a large, heavy saucepan over medium heat. When kernels pop, add remainder of the 1/2 cup kernels. Cook, covered, shaking pan occasionally, until popping slows, 6 to 7 minutes. Remove pan from heat; let stand, covered, 1 minute.
2. Stir together spices, salt, and zest in a small bowl. Toss hot popcorn with remaining tablespoon oil in a large bowl; sprinkle with spice mixture. Squeeze lime wedge over popcorn. Toss to coat. (58 calories per 1-cup serving)

Spiced Nuts and Seeds
Serves: 16

Ingredients
3 cups whole nuts
¼ cup flaxseeds
¼ cup quinoa
¼ cup sunflower seeds
2 egg whites
2 tablespoons honey
1 ½ teaspoon coarse salt
¼ teaspoon cayenne
¼ teaspoon cumin
¼ teaspoon cinnamon

Directions
Mix whole nuts together with flaxseeds, quinoa, and sunflower seeds. In a separate bowl, whisk egg whites with honey, coarse salt, cayenne, cumin, and cinnamon. Toss with nut mix. Spread in a single layer on a baking sheet; bake at 325 degrees until dry, stirring occasionally, about 30 minutes. Scrape from pan while cooling to avoid sticking. (178 calories).

Coconut-Date Bars
Serves: 8

Ingredients
3 tablespoons unsweetened shredded coconut
1 pound very soft dates, pitted
1/4 cup walnuts, toasted and finely chopped

Directions
Sprinkle 2 tablespoons coconut over the bottom of an 8-inch-square baking dish. Firmly press dates into coconut, covering bottom of dish. Sprinkle with remaining tablespoon coconut and the walnuts, gently pressing mixture into dates. Cut into 2-inch squares. Bars can be stored in an airtight container 2 to 3 days. (194 calories each)
