  • 1 small (1 cup) red onion, cut into 1/2-inch chunks
  • 1 (1 1/4 cups) green apple, quartered, cored, and cut into 1-inch chunks
  • 2 cloves garlic, sliced
  • 2 tablespoons ketchup
  • 2 teaspoons curry powder
  • Coarse salt and ground pepper
  • 4 boneless skinless chicken breast halves, about 6 ounces each
  • 1/4 cup low-fat plain yogurt
  • 1/4 cup chopped cilantro

  1. In a 2-quart microwave-safe dish with lid, stir together onion, apple, garlic, ketchup, and curry powder. Add 1/4 cup water. Season with salt and pepper; stir to combine.
  2. Add chicken; season with salt and pepper. Cover and microwave on high for 5 minutes. Turn chicken pieces over. Cover and microwave on high for 5 minutes longer or until chicken is opaque throughout. Lift chicken from dish, and divide among four serving plates.
  3. Stir yogurt into onion-apple mixture in dish; spoon sauce over chicken, and sprinkle cilantro over each plate. Serve with rice or noodles, if desired.

    If you've never had curried chicken or curried anything else, please DO NOT use this recipe. Whoever concocted it has no concept - zero, nada, zilch, zip - of cooking or curries.

    It's beyond a pathetic attempt and a disgrace to curried chicken, not simply because of microwave use but also because of the most hideous combination of ingredients. Ketchup and apples are never used in curies - unless you are clueless like the self-proclaimed microwave queen above.

    The mention of "2 teaspoons curry powder" makes no sense at all. There are quadrillion bazillion versions of manufactured, commercial curry powders on the market, some acceptable, others disgraceful, none consistent. What does the clueless author mean? Make your own from scratch, it is not difficult.

    Curried dishes take a while and are a very complex, balanced juggling of many ingredients - never ketchup or apples - so find another recipe, please..

    People are funny...and stuck in their ways, more often than naught. If it's not done the old fashion way, "It can't possibly be good!" SYKE!!! Well, I'm "ole school" with the best of them, but I'm also known as the Microwave Queen, too. Ironically, I just looked in one of my favorite Better Homes & Gardens cookbook just last evening..."More from your Microwave" published in 1980, for a reminder of how long to cook my lemon-peppered fish. Results...DELICIOUS...in 3-5 mins! I find people who don't know or understand something, they're usually the 1st to condemn something without giving it a try. This sounds like a nice dish. I don't comment or write reviews, but I had to speak out because I'm sick of people being one way only...which is their way or the highway! Get a life & please live a little, people...it's only food with straight forward directions. Try it, before you comment. You might learn something & surprise yourself. I will, because I love new things, appreciate convenience & delicious food. Thanks for providing this option!

    Curry has to be cooked properly on a stove in a pot. I'm Jamaican I would know. If you want to spent days on the toilet sure follow that so called recipe
