i usually use corn tortillas. if you fry them up just a little in oil to get them plyable, then they roll real easy after filling with the chicken and cheese. you can fit more in the baking dish and they are tastier to me, its my preference!

My girlfriend and I needed something quick for dinner. I looked up chicken, quick and easy and found this. put it together with some enchilada sause spooned over top. We also doubled everything with thoughts of leftovers. We had them but tey caused a riff when we both wanted to take them to work. Best thing we have since christmas. Thanks to whoever posted.

AWESOME! I stirred a can of black beans into the mixture too and it was great! I also had some enchilada sauce in the pantry that I spooned over the top of each one. I didn't have any green chiles so I had to leave that out but they were still really good. Use whole wheat tortillas and low fat sour cream, cheese, and ranch....and this is a very healthy recipe! Two thumbs up :)
