Slow-Cooker Chili Chicken TacosHearty meats such as chicken thighs become fall-apart sumptuous after a long, gentle simmer in the slow cooker -- the results are ideal for shredding into tacos or sandwich fillings.
  • 2 pounds boneless, skinless chicken thighs (about 6)
  • 4 garlic cloves, thinly sliced
  • 1/2 cup prepared tomato salsa, plus more for serving (optional)
  • 1 to 2 tablespoons chopped canned chipotle chiles in adobo
  • 1 tablespoon chili powder
  • Coarse salt and ground pepper
  • 8 hard corn taco shells
  • Cilantro, shredded cheese, lime wedges, and sour cream, for serving (optional)

  1. In slow cooker, combine chicken, garlic, salsa, chiles, chili powder, 1 teaspoon salt, and teaspoon pepper. Cover; cook on high, 4 hours (or on low, 8 hours).
  2. Transfer chicken to a serving bowl, and shred, using two forks; moisten with cooking juices. Serve in taco shells, with toppings, if desired.

    Made this last week and it is great. I have since used this chicken for tacos, burritos, quesadillas, BBQ chicken sandwiches, and nachos. I'm still thinking up other uses. I will say if you are going to cook for the full 8hrs on low add about 1/2 cup of water or chicken broth to the cooker.

    I substituted chicken breasts for thigh meat and it turned out fine. Next time I think i might add a little bit of Weber rib and chicken seasoning for fun.

    Great Saturday meal. Put it on in the morning, and have it for lunch or an early supper. I added 1t cumin and used soft flour tortillas. Wait until the end to salt and pepper it. Plenty of salt in the salsa and adobo. I might add 1/2 pouch of low salt taco seasoning next time. Great recipe and lots of room for you to tweak it.
