User post: How to Make the Perfect Guacamole

Ok, I lied. That should have read, how to make Fergie's Famous "Guacamole"! Because it's not your traditional recipe for authentic guac - but it's a crowd pleaser and one of the recipes that I'm repeatedly asked to make or that people want to borrow when they're entertaining. A friend of mine calls it "Avocado Salad." Any which way you call it, it's a winner. Best of all, it's easy, tasty and healthful. Here goes:

Fergie' Famous Guacamole (also dba Avocado Salad)

Ingredients:

  • 2 large avocados (I'm not picky; you can buy whatever's on sale)

  • 1 large tomato (I like the ones off of the vine; they tend be juicier than others)

  • 1 small red onion

  • 2 tablespoons Extra-Virgin Olive Oil

  • I packet Goya Sazon with Cilantro & Annantto (the secret ingredient!)

  • 1 small lime

  • Salt and pepper to taste



Directions:

Peel and coarse chop your avocados; add to bowl. Dice the tomato and the red onion and add to the avocado. Add EVOO. Sprinkle 1/2 of a packet of the Goya Sazon to the mixture; combine gently. Squeeze in the juice of 1/4 of the lime. Add salt and pepper to taste.

That's it! You're done. This is great on tacos, in sammies, or - my favorite - all by itself with tortilla chips. You can get fancy with it if you like: add fresh cilantro, garlic, jalapenos - the sky's the limit. I often make two batches (one with red onion and one without) to please the masses (aka my husband). If you like more tomato than avocado, then use 2 tomatoes and 1 avocado; it's perfectly customizable and entirely up to you how you spin it.
