Canned Pure Pumpkin



When working with boxed baking mixes, from brownies to cakes, forget about the oil, eggs, and any other fatty ingredients the directions might call for. All you need is a 15-ounce can of pure pumpkin. When you mix the two together, you get a thick batter that bakes up perfectly and tastes decadent, but it has WAY less fat and fewer calories than traditional baked goods. Just remember to use canned PURE pumpkin, not pumpkin pie filling (which is loaded with sugar and extra calories!). Canned pumpkin is also great when added to your morning bowl of oatmeal.

Cauliflower

When steamed and mashed, cauliflower blends seamlessly into mashed potatoes -- just add a little fat-free half & half (or your light milk or creamer of choice), light butter, salt, and pepper, and you've got what we call "mashies." Or finely chop steamed cauliflower and add it to mac & cheese (use high-fiber macaroni and light or fat-free cheese to keep the dish guilt-free) -- it bulks up the serving size too!

Old-Fashioned Oats



While we love to use this shelf-stable staple in places you'd expect (large oatmeal bowls, soft cookies, and more), we're always looking for new ways to sneak it into foods to up the fiber count. Oats work great in pancakes, Danishes... even homemade pizza crust (click below for the full 411 on that)!

Turnips

Peel turnips and pair them with potatoes. When thinly sliced, you can layer them into casseroles. Or use a crinkle cutter and turn them into French-fry-shaped spears -- they bake alongside potatoes so well. They even work great as a full-on fry swap. The best part? The crazy-low calorie count (just 8 per ounce)... Fantastic!

Mushrooms



When mushrooms are chopped and cooked, it's amazing how close the texture, flavor, and appearance can be to ground meat. That means mushrooms are the PERFECT addition to meatloaf recipes and burger patties. We've even been known to swap out meat entirely for mushrooms. Large portabella caps are ideal as burger swaps, and portabella strips work great as a steak swap in fajitas, salads, and stir-frys.
