A Healthy Summer Picnic Menu

If you're looking for a way to awaken your tired summer plans, consider planning a picnic. Whether with the family or with friends, a simple meal can turn into a memorable day.

If your idea of a picnic is serving drive-thru fried chicken and biscuits atop a checkered blanket, we want to help you rethink. Each of these recipes are flavorful, healthy and sure to be crowd-pleasers. Let the kids get involved with the planning and preparation of the picnic to make the day even more special.

Main Entree

Greasy fried-chicken and a fatty brisket are definitely tasty, there's no denying that. However, they're going to leave you feeling weighed down and with no calorie room for dessert. You can prepare this Low Fat Texas Shredded Pork ahead of time and serve hot or cold on whole grain buns, or grill this BBQ Chicken with a homemade sauce right in the park.

If you want to get away from a hot meal, try low-sodium turkey or chicken from the deli for build-your-own sandwiches.

Side Dishes

At a picnic, there are some traditions that shouldn't be messed with. That's why we're fans of these healthier alternatives for go-to sides like this Celery Seed Slaw with zero fat, or this All American Potato Salad with less than a half-gram of fat. These offer all the familiar flavors without hindering your diet.

You'll also want to take advantage of the fresh summer fruits. Make a quick fruit salad by chopping apples, oranges, strawberries, blueberries and red grapes with a couple tablespoons of honey. Or, keep it simple by serving fresh, chilled watermelon.

Beverages

In the hot sun, nothing is more hydrating than ice cold water. However, at a picnic, iced tea always seems to hit the spot. This Fruity Iced Tea or Rhubarb Iced Tea will definitely hit the spot and offer a refreshing alternative to sodas and punch.

Desserts

No picnic would be complete without a sweet finale. Fresh fruit dipped in yogurt is a simple, low-calorie way to satisfy a post-meal craving. Give these Chocolate Raspberry Brownies a whirl for a gooey, baked treat, or cool off with this Berry Pudding topped with fresh raspberries.
