Best of My Lava Chocolate Cake

1/4th of recipe (1 lava cake): 182 calories, 4.5g fat, 433mg sodium, 32g carbs, 1.5g fiber, 18g sugars, 4g protein

Ingredients

Filling:
1/2 tbsp. mini semi-sweet chocolate chips
1 tsp. fat-free liquid creamer
1/2 tsp. light whipped butter or light buttery spread
Half of a sugar-free chocolate pudding snack with 60 calories or less

Cake:
1 tbsp. mini semi-sweet chocolate chips
1 packet hot cocoa mix with 20 - 25 calories
1/4 of an 18.25-oz. box (about 1 cup) moist-style chocolate cake mix
1/4 cup fat-free liquid egg substitute
1/2 tsp. granulated white sugar or Splenda No Calorie Sweetener (granulated)
2 dashes salt

Directions:
Preheat oven to 350 degrees. Spray four 4-inch baking ramekins (or oven-safe mugs) with nonstick spray.

To make the filling, place chocolate chips, creamer, and butter in a microwave-safe bowl. Microwave for 20 seconds, or until butter has melted and creamer is hot. Stir until chips have mostly dissolved. Let cool slightly. Stir in pudding.

Spoon mixture into 4 evenly spaced mounds onto a sheet of parchment paper on a plate. Freeze until firm but not frozen solid, about 25 minutes.

To make the cake, combine chocolate chips and cocoa mix in a glass. Add 1/4 cup very hot water and stir until ingredients have dissolved. Transfer mixture to a large bowl. Add 1/2 cup cold water. Add all remaining cake ingredients, and whisk until smooth.

Evenly pour cake batter into the ramekins. Place one mound of filling in the center of each. Bake until top centers are firm, about 15 minutes. Enjoy!

Frozen Fudge Chip Freeze

1 packet hot cocoa mix with 20 - 25 calories
2 no-calorie sweetener packets
1/4 cup light vanilla soymilk
1 tbsp. sugar-free chocolate syrup
1 tbsp. mini semi-sweet chocolate chips
1 cup crushed ice or 5 - 8 ice cubes
2 tbsp. Fat Free Reddi-wip

Directions:
In a tall glass, combine cocoa mix with sweetener. Add 1/4 cup hot water and stir to dissolve.

Transfer mixture to a blender. Add soymilk and 1/4 cup cold water. Add all remaining ingredients except Reddi-wip and blend at high speed until smooth.

Pour, top with Reddi-wip, and slurp!

Dreamy Chocolate Peanut Butter Fudge

One 18.3-oz. box fudge brownie mix
2 cups canned pure pumpkin
2 tbsp. light chocolate syrup
2 tbsp. reduced-fat peanut butter, softened

Directions:
Preheat oven to 350 degrees. Spray an 8" X 8" baking pan with nonstick spray.

In a large bowl, thoroughly mix brownie mix, pumpkin, and chocolate syrup until completely smooth and uniform. Spread mixture into the pan.

Spoon peanut butter over batter in the pan and use a knife to swirl it in.

Bake until edges are slightly firm and top center is dry to the touch, about 35 minutes.

Let fudge cool. Cover the pan with foil and refrigerate until completely chilled, at least 2 hours. Cut into squares and get ready for a fudge frenzy!
