Ingredients
Fresh strawberries, medium sized
3/4 cup chopped chocolate or milk chocolate chips

Directions
Line baking sheet with wax paper. Melt chocolate chips in microwave for 1 minute. Stir then continue microwaving, stirring every 20 seconds, until melted. Dip bottom half of each strawberry into chocolate. Place on baking sheet and repeat with remaining berries. Refrigerator to let the chocolate set, usually about 30-45 minutes.

Ingredients
1/4 cup semisweet chocolate chips

Directions
Melt chocolate chips in microwave for 1 minute. Stir then continue microwaving, stirring every 20 seconds, until melted. Combine melted chocolate and ricotta in a small bowl. Spoon a scant 1 tablespoon of the mixture on each chocolate wafer. Top with 1/4 teaspoon jam. Enjoy unabashedly.

Ingredients
1 pint blueberries or raspberries
1/2 cup water
8 basil leaves
2 tablespoons lime juice
4 teaspoons honey
1/4 teaspoon salt
fresh basil for garnish

Directions
Blend berries, water, basil, lime juice, honey, and salt in blender until smooth. Place in airtight container and freeze until slushy, usually about 3 hours. Divide and pour into 4 glasses and serve with a sprig of fresh basil.

Insert a Popsicle stick into each banana piece. Cover each piece with melted chocolate using a rubber spatula and sprinkle with coconut. Place the bananas baking sheet and freeze until frozen, about 2 hours.
