Delicious New Ways to Eat THIS Thanksgiving-Approved Superfood

Not only are sweet potatoes a superfood since they are high in fiber and important antioxidants, they are also a fall classic (and no, not the baseball kind) on the Thanksgiving table. Whether served up casserole style, in a pie or even just mashed and topped with marshmallows (YUM!), they're pretty much a guarantee. Perhaps it's because their slightly sweet yet earthy texture is so versatile, or perhaps it's because of their vibrant color; either way, we love this superfood. So skip the yams next Thursday and try one of these inventive recipes instead.

* Sweet Potato Biscuits: Biscuits make everything better, and sweet potato-based ones are no exception. The orange root veggie is added to the biscuit dough to give it a slightly sweet flavor (think cornbread) but with a wealth of health benefits. These babies will pair perfectly with your Thanksgiving turkey and turn into a treat when you top 'em just outta the oven with cranberry sauce.

* Chickpea-Sweet Potato Burgers with Dilly Cucumbers: Make the sweet potato your main by grating it up, then combining with chickpeas and tahini in a food processor, and forming into burger patties. Topped off with a cucumber-dill mixture, these veggie burgers are sure to satisfy anyone's palate -- meat eaters included.

* Sweet Potato and Kale Pizza: This delicious sweet potato-topped pizza may have you wanting to skip turkey -- and Thanksgiving -- altogether. (I know it's crazy, but it's true.) The sweet potatoes balance out kale's slightly bitter flavor, while the goat and parmesan cheeses add a creamy, comfort-food touch.

* Roasted Sweet Potato and Black Bean Salad: If you want to keep sweet potatoes on your menu of Turkey Day sides, try this twist on a simple, roasted potatoes. Red bell pepper, black beans, garlic and arugula come together with the spuds for a colorful and tasty salad. The lime-balsamic vinaigrette adds the perfect finishing touch.
