Jay-Z posted a note on his site yesterday saying, "On December 3rd, one day before my 44th birthday [Ed. note: HBD, J! - RJ] I will embark on a 22 Days challenge to go completely vegan, or as I prefer to call it, plant-based!!"

Two exclamation points, you guys. He's super excited. And our girl (OK, his girl) Beyonce is getting in on the dairy-free, veggies-only diet, too.

Jay is looking for recs from "professional vegans" for this "spiritual and physical cleanse." So we, of course, find it our own professional duty to suggest a few recipes from our SELFy arsenal (that's assuming the couple cooks.)

Mr. and Mrs. Jay, may we interest you in these 5 satisfying vegan meals? There's a delightful creamy fettucini how-to in store and a burger, too. (A BURGER, GUYS!) It may be made out of chickpeas, but whatever, it's a burger, right?

Or do you have a bit more of an Asian craving for this evening? Maybe these Hot-and-Sour Peanutty Noodles With Bok Choy are more up your alley. We're sure Baby Blue Ivy will love.

And if all else fails: Check these three easy vegan swaps you can incorporate into just about any of your meals at home.

Jay has promised to post his progress on his site, so we'll (obviously) be tuning in.

What would you be willing to give up for three weeks? Would you go vegan like the King and Queen Of All Of Music? Or would it be something else? Tell us in the comments section below or tweet us @jackierisser and @SELFMagazine.
