Low-Cal Cinco De Mayo Recipes That'll Fool Everyone!

Break out the sombreros and get ready to party! Here are three no-guilt Mexican-style appetizers that taste just as delicious as the standard high-calorie versions, courtesy of Hungry Girl!


Holy Moly Guacamole

1/6th of recipe (about 1/3 cup): 78 calories, 3g fat, 320mg sodium, 10.5g carbs, 3.5g fiber, 4g sugars, 3.5g protein

Our guacamole has half the calories and a quarter of the fat of regular guac. The secret ingredient? Peas! We're not so great with secrets...


Ingredients:

One 15-oz. can early/young peas, drained
1/2 cup mashed avocado (about 1 medium-small avocado)
1/4 cup fat-free plain Greek yogurt
1 tbsp. plus 1 tsp. lime juice
1/2 tsp. minced garlic
1/4 tsp. salt, or more to taste
1/8 tsp. black pepper, or more to taste
1/8 tsp. ground cumin
1/8 tsp. chili powder
1/3 cup chopped cherry or grape tomatoes
1/4 cup finely chopped onion
Optional: chopped fresh cilantro, chopped jarred jalapeños

Directions:
Thoroughly mash peas in a medium-large bowl. (Or puree peas in a small blender or food processor and transfer to a medium-large bowl.)

Thoroughly mix in avocado, yogurt, lime juice, garlic, and seasonings.

Stir in tomatoes, onion and, if you like, optional ingredients. Enjoy!

Tiny Taco Salads



1/6th of recipe (2 tiny salads): 119 calories, 2.5g fat, 446mg sodium, 15.5g carbs, 2.5g fiber, 1.5g sugars, 8.5g protein

Inspired by restaurant versions with ginormous fried taco shells, these fat-slashed minis are both super-cute and completely delicious...

Ingredients:
12 small square wonton wrappers (found with the refrigerated Asian ingredients)
1 cup frozen ground-beef-style soy crumbles (like the kind by Boca or Morningstar Farms)
1/2 cup fat-free refried beans
1 tsp. taco seasoning mix
1 1/2 cups shredded lettuce
1/2 cup shredded reduced-fat Mexican-blend cheese
1 tbsp. sliced black olives, chopped
6 tbsp. chunky salsa or pico de gallo
2 tbsp. fat-free sour cream

Directions:
Preheat oven to 350 degrees. Spray a 12-cup muffin pan with nonstick spray.

Place a wonton wrapper in each cup of the muffin pan, and press it into the bottom and sides. Lightly spray with nonstick spray. Bake until lightly browned, about 8 minutes.

In a microwave-safe bowl, mix soy crumbles, refried beans, and taco seasoning. Microwave for 1 1/2 minutes, or until hot. Stir well.

Once cool, transfer wonton shells to a large plate. Evenly distribute shredded lettuce among shells, 2 tbsp. each. Top with soy-crumble mixture, about 1 tbsp. per shell. Evenly distribute cheese and chopped olives among the shells.

Finish off each mini taco salad with 1/2 tbsp. salsa and 1/2 tsp. sour cream. Serve and enjoy!

Exploding Chicken Taquitos

1/4th of recipe (2 taquitos): 197 calories, 2.5g fat, 594mg sodium, 22.5g carbs, 3g fiber, 2g sugars, 20.5g protein

Don't be alarmed by our use of canned chicken. It works SO well in this recipe, and it'll save you some party-planning time.



Ingredients:

10 oz. canned 98% fat-free chunk white chicken breast packed in water, drained and flaked
1/2 cup salsa
1/3 cup shredded fat-free cheddar cheese
1/4 tsp. taco seasoning mix
Eight 6-inch corn tortillas
Optional dips: red enchilada sauce, additional salsa, fat-free sour cream

Directions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.

In a medium bowl, mix chicken with salsa. Cover and refrigerate for 15 minutes.

Drain any excess liquid from the chilled chicken mixture. Stir in cheese and taco seasoning.

Place tortillas between 2 damp paper towels. Microwave for 1 minute, or until warm and pliable.

One at a time, spread each tortilla with 1/8th of chicken mixture, about 2 tbsp.; tightly roll up into a tube, place on the baking sheet, seam side down, and secure with toothpicks if needed.

Bake until crispy, 14 - 16 minutes. (Don't worry if they crack and "explode" a little!)
